The spiny lobster is found from Baja California up to Monterey Bay. Local fishermen catch them in traps and by hand, one at a time. From a conservation standpoint, they are one of the most strictly regulated fisheries in North America. The spiny lobster differs from Maine lobsters in that they lack large front claws and have tail meat that is firm, sweet, delicate and mild. It is a true seafood lover’s delicacy and is considered one of California’s signature seasonal dishes.
